Ingredients for the Flan

Plain Flour- 225 gms

Cold Butter- 115 gms

Salt- a pinch

Ingredients for the Filling

Broccoli- 2 small heads

Plain flour/wheat flour- 2 tbsp

Butter- 3 tbsp

Milk- 2 ½ cups

Salt- as per taste

Pepper- as per taste

Mixed herbs- ¼ tsp

Grated Mozzarella- for garnish


Sieve the flour and salt together. Cut the butter with a knife and rub into the flour with finger tips. Gradually add ice cold water (2-3 tablespoons) to make the dough into a rolling consistency.

Lightly flour the rolling pin and the pastry board. Divide the dough into two parts and roll out one part to fit the diameter of the flan dish (4”or 5”). Place the dough in an ungreased flan dish and prick it with a fork all over. Brush with a little milk or beaten egg for the glaze. Bake in a hot oven at 450 oF for about 6-8 minutes.

Heat a pan, add butter and let it melt. Add plain flour and cook for 1 minute. Then add milk stirring continuously on slow flame to avoid lump formation. Add salt, pepper and mixed herbs. Bring it to a boil and put off the heat.

On the other side boil the broccoli till tender but not soft. Now add the broccoli to the sauce. Mix well and set aside.

Remove the flan from the oven and fill it up with the prepared mixture. Garnish with grated mozzarella and place it back in the oven at 450 oF till the cheese turns golden-brown.

Serve it hot with a drizzle of tobasco!
