Zucchini Muffins with Banana and Applesauce

Plain Yogurt- 1 cup

Olive oil- 2 tbsp

Grated Zucchini- 1 cup

Raw Honey- ¼ cup

Mashed banana- 1 cup

Milk- ¼ cup

Applesauce- ½ cup

Salt- a pinch

Cinnamon- 1 tsp

Baking powder- 2 tsp

Rice flour/coconut flour- 2 cups


Preheat the oven to 350 degrees.

Combine all the dry ingredients in a large mixing bowl.

In a separate medium sized bowl, whisk the applesauce, milk, olive oil, banana and honey.

Add the wet ingredients to the dry ingredients and stir. Add in the zucchini.

Pour mixture into lightly oiled muffin cup and bake for 15-20 minutes until the tops have browned.

Serve with plain yogurt and enjoy a healthy snack!
